The focus of this certificate programme is on food preparation, cooking, and catering. It is a subfield of the hospitality industry but serves the same clientele as any other industry, and the public at large, through a variety of outlets, whether small or large (industrial mass catering), general or specialized (pies, burgers, chicken, etc). It is the entry-level (NQF3) national qualification in food preparation and cooking (excluding skills programs in cooking at level 2 such as Cook – Fast Foods, or Cook – Convenience Foods). Despite the qualification title’s (somewhat misleading) reference to “fast foods” the qualification does also include general and large-scale industrial food preparation, cooking, and catering.
Apart from the main focus (food preparation), the program includes the closely related needs for hygiene, health, and safety; table and counter service; food storage and stock management; and the contextual need for understanding the relevant business, customer care, interpersonal relations, self-improvement, and elementary management and finance. You will also be able to apply the principles of health and safety, food services, food storage and stock management, customer care, effective working relationships, and personal development. It also caters to the subfield of the hospitality industry which serves the public at large, through a variety of food outlets.
